Julia's Fantastic Gazpacho,
a Cold Vegetable Soup

Gazpacho Soup
4-5 ripe tomatoes
 (best to use yellow & red organic) chopped
corn removed from 1 cob
2 cucumbers, peeled & coarsely chopped 2 Tbspn cilantro chopped
1 large onion chopped 2 Tbspn olive oil
1 green pepper seeded & chopped 1 Tbspn tomato paste
1 red pepper seeded & chopped ¼ cup apple cider vinegar
1 jalapeño pepper seeded & chopped 1-2 tspn salt
3 cloves garlic, chopped 3 cups cold water

Serves 3 - 4.

  1. Put tomato paste in a bowl.
  2. Add chopped vegetables and mix with a spoon or put in the blender or food processor.
  3. Add apple cider vinegar, water, salt, olive oil and stir. Add more water if needed.
  4. Refrigerate for an hour.
  5. Top with chopped cilantro serve with whole grain bread & butter.
